Winter is the season of changing clothes in the vineyard: after the harvest, when they are at their best, the vines shed their leaves and enter the resting phase. This is the time to begin dry pruning, which involves manually cutting back the shoots that have developed during the year. Only two “fruiting heads” are selected and they are bent along the wire in order to develop a proper plant structure for the new vintage. The cut shoots are left between the rows and mechanically ground to enrich the soil. The vines are then ready to dress with the new shoots for the following season
